Apple Pork Chops

We've been eating a lot of pork and chicken lately. I've been trying different ways to make the meals more interesting.

This was a quick and easy pork recipe. Quick prep too. I prepared it in the morning and Ken just popped it in the oven  when he got home.

 Recipe:

4 boneless pork chops
2 small apples
3 tablespoons brown sugar
3 tablespoons balsamic vinegar
3 tablespoons olive oil (I used a heavy balsamic olive oil)

Peel and slice apples into thin slices.
Place a couple of slices beneath and on top of each pork chop in your baking dish.

In a small bowl, combine brown sugar, olive oil and vinerar. Mix together thoroughly.

Pour sauce over pork chops.

Preheat over to 350 degrees. Bake for 50 minutes or until cooked through and meat is no longer pink. The timing may vary a little depending on how think your pork is.

Enjoy!
