A few weeks ago I went grocery shopping hungry. That resulted in not one, not two, but three boxes of cake mix coming home. And a special scoop for preparing the cupcakes for filling. Yes, I had plans of decadent cupcakes.
And then I ate lunch. And the boxes were put away. Anique had been eyeing those boxes and so she and Ellie got together one Sunday morning to bake up a batch of red velvet cupcakes. We whipped up some frosting as well. Tip: when using gel food coloring to create purple--go light on the blue! It completely overwhelmed the red and even doubling the batch and adding more red couldn't fix it.
But, they did taste good.
